Green Lentil Tacos

Who doesn’t love an easy vegan taco recipe? This is the perfect summertime taco recipe, it’s refreshing and has so much flavor packed in, perfect for your next backyard picnic. Green lentils are an amazing substitute for ground meats since they hold their shape so well after being cooked and they also have a great peppery flavor that really adds to the flavor of these tacos. We also love how the cilantro and limes contrast those peppery and spicy flavors.  Pair these tacos with a blended margarita and kick your feet up! INGREDIENTS 2 cups green lentils, cooked (1 cup dry lentils) 1 onion, finely diced 1 TBSP vegetable oil 1-2 cloves minced garlic ¼ cup vegetable broth Corn Tortillas...

Black Bean Burger

We can’t say enough good things about this Black Bean Burger and love to have them year round since they are just as good cooking them inside on a cast-iron skillet, as they are outside on the grill. Get together all the classic fixings and pile them on for a classic burger taste. Though they’re also great with a bit of guacamole! These black bean burgers hold their shape really well thanks in large part to the dense texture of the black beans. The best part about these burgers is that they are so quick and easy. The whole process from start to finish will take just 30 minutes and just one prep dish! Like we said, there aren’t enough...

We decided to use them for a delicious chili and because red lentils puree easily, we added some other legumes to this recipe for some texture. As far as we are concerned dried beans are king, but if you don't have any on hand you can use canned and swap out the black beans and brown lentils for what is in your pantry.  This is a mild chili so if you are looking...

How to Sprout Lentils Sprouted lentils are a microgreen. What is a microgreen? Microgreens are young vegetable greens that are approximately 1-3 inches tall. Sprouting lentils at home is easy, requires minimal equipment and is inexpensive. It is definitely cheaper than buying sprouts at the supermarket, home sprouted lentils are versatile and packed with flavor and nutrition.  When purchasing lentils for sprouting or making microgreens you will need to make sure that they are non-irradiated.
